Cupcake Bakery Coming To 58 Main Street
Silver Spoon Bakery will focus on just two items: cupcakes and French macaroons.
It's official: Main Street is getting a bakery. But don't plan to pick up a fresh baguette there once it opens in November. Rather, the Silver Spoon Bakery will concentrate on cupcakes and French macaroons, offerings that cause people in some parts of the country to line up for 20 minutes or longer to buy.
Kelly Colgan, owner of Silver Spoon, appeared before the Town Council Monday night seeking a victualling license for her shop. The council voted 5-0 in favor of granting the license.
"I’ve always baked. It was a hobby and I wanted to continue to further," she told the councilors, adding, "Cupcakes are very popular right now."
Of course, many in East Greenwich will recall this is not the first cupcake business to open here. Sweet Nest opened where the Village Cafe is now (at 431 Main St.) in May 2011 but closed less than three months later.
Colgan, who has an MBA and a background in public relations, said she talked to one of the owners of the Sweet Nest a year ago. She thinks her location – at 58 Main St. – will bring in more foot traffic and she's betting on her more specialized product line.
"We're focusing on niche products," said Colgan.
Colgan's been hard at work developing her concept for months, and even gained national media attention when she developed a "TSA Complaint Cupcake" after she heard about a woman who had her cupcakes confiscated at the airport in Las Vegas last December. Colgan decided to create a cupcake with only 3 ounces of frosting, clear plastic wrapping, and a special "boarding pass" and had a friend see if he could get it through the TSA screening at T.F. Green Airport. It worked, according to a story on the Huffington Post.
Right now, the shop space is undergoing renovations. All the baking will be done onsite. She said she hopes the shops will be open by the first week of November – "before the holidays."
