Belly-Warming Broccoli and Cheese Soup

You know you've made a good soup when you wake up the next morning wanting a bowl for breakfast!  Last night's dinner was amazing...broccoli and cheese soup with a side of warm sourdough bread!  I literally wanted a bowl for breakfast and lunch today but decided to be fair and wait until dinner so my family can share it with me! 

In college all of the kids went crazy when the dining area served 'Au Bon Pain's' Broccoli Cheddar Soup.  My friends and I would have a big bowl for lunch with french bread on the side and take a container home for dinner too.  I've tried many recipes to try to duplicate this soup and it wasn't until last night that I nailed it!

It is thick, savory and delicious soup.  Every bite makes you want to close your eyes and scream 'YUM' inside your brain!  Besides it being really good...it's SO EASY to make!  I am all about easy at this stage of my life.  Life is just too busy to really enjoy cooking for 3 hours!  I'd rather be playing with my children or going for a bike ride with them!

Make sure you try this soup...I promise a happy family during dinner!  It takes about 35 minutes to make.

Broccoli and Cheese Soup
serves about 6-8

Ingredients
-1/2 cup butter
-1 onion, chopped
-1 (16 oz) package frozen chopped broccoli, thawed
-1 (32 oz) carton chicken stock
-1 (32 oz) carton vegetable stock
-1 lb velveeta cheese, cubed
-2 cups milk
-1 TBS garlic powder
-2/3 cup cornstarch
-1 cup water

Directions
1. In a stockpot, melt butter over medium heat. Cook onion in butter until onion is softened. Stir in broccoli, and cover with chicken and vegetable stock. Simmer until broccoli is tender, 10 to 15 minutes.

2. Reduce heat, and stir in cheese cubes until completely melted. Mix in milk and garlic powder.

3. In a small bowl, stir cornstarch into water until dissolved (I use a fork). Stir into soup; cook, stirring frequently, until thick.  It takes about 7 or 8 minutes before getting thick...make sure you are patient and stir it this long!

Serve with your favorite kind of bread!!!
